Herring, Rice Bread and Tomato Cream recipe

Flavour: Indian Tonic




  • 4 herring
  • sundried tomato in olive oil
  • 200 g rice
  • 350 ml water
  • salt
  • oregano
  • thyme
  • olive oil
  • 700 ml crushed tomatoes
  • 4 sheets gelatine
  • 100 ml Schweppes Tonic
  • 20 g sugar
  • juice of half a lemon
  • salt
  • pepper
  • some basil leaves
  • a few sprigs of basil

Method of preparation

For the rice bread:
1. Boil the rice in plenty of water. Set aside, drain and grind the rice so it becomes rice flour. Leave to cool and place on baking paper with the help of a spatula, spreading well and making very thin layers. Add the herbs, and leave to dry in a well ventilated place. This can take several hours, and preparing one day beforehand is recommended.
2. Once the flour has dried, it becomes hard and sticks to the paper, so must be carefully lifted piece by piece. Don’t worry if it breaks: irregular pieces work just as well. Fry the pieces in plenty of olive oil: they will expand in a couple of seconds. Remove from the heat, place in a bowl with kitchen paper and set aside.

For the tomato foam:
3. Soak the gelatine sheets in cold water. Heat a pot with the crushed tomato pulp, 4 tablespoons of extra virgin oil and a few leaves of fresh basil.
4. Once hot, remove from the heat and add the drained gelatine sheets, the juice of half a lemon, the Schweppes Tonic, sugar, salt and pepper and blend them all together with a whisk.
5. Pass through a fine sieve and leave to cool in the refrigerator. Once it is half set, fill the siphon, charge the compressed air and leave to rest in the refrigerator for about 10 minutes.
6. Siphon the tomato foam into a cocktail glass, and decorate with a few sprigs of basil. Cut each herring fillet into 2/3 pieces, depending on the size. On the plate, first place a piece of rice bread, then a little dried tomato and the herring on top. Serve the tomato foam in a bowl or small glass, shaking the siphon well and spraying with caution.

Whilst the rice sheets are drying, rectangles can be made with a knife, so when it is set aside, the pieces will be uniform before frying.
