Moussaka with York Ham recipe

Flavour: Bitter Lemon




  • 6 large aubergines (eggplants)
  • 8 slices York ham
  • 750 ml passata
  • 6 slices mozzarella
  • salt
  • pepper
  • oregano
  • 1 tbsp sugar



Method of preparation

1. Wash, slice and salt the aubergine, then grill on medium heat and set aside.
2. Heat a saucepan with a tablespoon of olive oil and add the passata, stirring occasionally. Add the sugar, pepper, and oregano, heat for about 10 minutes and set aside.
3. Preheat the oven to 180C. Ladle some of the passata into a baking dish, spread this, and add layers of aubergine and ham.
4. Continue this procedure at least 3 times, and finish with tomato sauce and mozzarella.
5. Sprinkle with oregano.
6. Cook au gratin in the oven until the mozzarella starts to brown.

In this recipe tomato sauce (passata) was used, but ideally a homemade tomato sauce can be prepared.
