Flavour: Lemon




  • 4 large eggs
  • 500 g sugar
  • additional sugar for sprinkling
  • 500 g wheat flour
  • 150 ml milk, full fat or skimmed
  • 150 ml olive oil
  • 75 ml water
  • zest of 1 lemon
  • 100 ml Schweppes Lemon
  • cinnamon
  • custard for serving



Method of preparation

1. Whisk the eggs while gradually adding all the ingredients except the cinnamon. Add the flour at the end along with the Schweppes Lemon.
2. Pour the mixture into a baking dish lined with parchment paper and preheat the oven to 180C.
3. Before putting the cake in the oven, sprinkle a generous amount of sugar and cinnamon over the top to add texture, aroma and colour.
4. Put in the oven for 40 minutes.
5. Leave to cool before serving with custard.

In this recipe we use custard, but it can also be served with coulis, jam or ice cream.
